Slow Cooker Pork Roast with Rice

No doubt, I used to be a crock pot snob.  Oh, I had one when I was in college and used it without a clue.  Once I “grew up”, I put it to work as a keep-warm pot for queso or whatever.

However, within the last 9 months, I’ve spent a lot of time in hotels and after a while, I just cannot stand another frozen anything or fast food.  Accordingly, I acquired a crock pot and have enjoyed some tasty breaks in the plastic food I otherwise consume.

This recipe doesn’t take a great picture (so I am showing you the roast I purchased), but I assure you it is delicious … and thrifty.

Slow Cooker Pork Roast with Rice

Ingredients
  • 24 Ounce Pork Roast (Sometimes labeled as "Sirloin"; not a Tenderloin)
  • ¾ Cup All Purpose Flour Measured into a Cake Pan
  • Salt and Lots of Pepper
  • 3 Tablespoons Oil
  • 20 Ounces (Fluid) Water
  • 6 " Carrot, Peeled and Cut into Thirds
  • 4, ¼" Thick Slices of a Medium Yellow Onion, Quartered
  • ¼ Anaheim Pepper, Deveined and Seeded (May substitute 3" x 1" piece of Bell Pepper)
  • 1 Large Clove of Garlic, Crushed, Peeled and Thinly Sliced
  • ⅔ Cup Long Grain White or Saffron-Flavored Rice (Mahatma Brand Works at $.89 for the package!)
  • ¼ Pound Fresh Green Beans, Snap off Stems and Cut or Break into 2" Pieces
  • 1 Yellow Squash, Cross-cut into ⅛" Thick Coins, then Quartered
Instructions
  1. Turn your empty slow cooker to the "High" setting for pre-heating while you prepare the vegetables, etc.
  2. Wash roast and salt and pepper on both sides; dry with paper towel. Heat oil in a skillet over medium high heat and when hot, dredge the roast on all sides in the flour and place in the pan. Brown thoroughly on both sides, then remove roast to pre-heated slow cooker
  3. Add next 5 ingredients, cover pot for 2 hours. Turn roast over and add Green Beans and rice. Stir to make sure the rice is submerged in liquid. Reduce heat to "Low" and cook for 1 hour more.
  4. Check roast for doneness ... it should be extremely done and fork tender; correct for salt and pepper. If it is not done, cook longer; on High if desired. If it is done, add squash, cover and cook for 20 additional minutes. Turn off heat and serve when ready.
