Last night we decided to have some left over Tuna Casserole for dinner. My sweet wife said, “I would love to have a Strawberry Feta Vinaigrette with a Spinach Salad, too”. I set about making her wish come true and amazingly, we had all the ingredients necessary, including fresh organic baby spinach! So having a bit of time on my hands, I came up with the following recipe.
She loved it and said it was the best Feta dressing ever! I hope you enjoy it, too.
