Fluff Top Rolls

From 1983 to 2006, our family lived in a small Texas town mid-way between Austin and Houston, named Brenham.  It is a great place to raise a family and has a long history of notable gastronomics.  Blue Bell Ice Cream, named by Time Magazine as one the world’s 10 Best, has its foundation and corporate offices there, for example.

The “Fluff Top Roll Restaurant” was located on the town square and was an old fashioned country cafe sort of place.  I don’t remember their menu, but I remember the freshly made yeast rolls!  Here’s my rendition …

Ingredients
  • 3½ Cups Unbleached All-Purpose Flour (Or 2½ Cups White and 1 Cup Whole Wheat )
  • 1 Cup Milk or Half and Half
  • ½ Stick Butter
  • 1 Teaspoon Salt
  • 3 Tablespoons Sugar
  • 1 Envelope Rapid Rise Yeast
  • 1 Egg
Instructions
  1. Put ½ stick butter in a 2 cup measure, add sugar and salt and microwave on High 30 seconds at a time, stirring in between, until butter just melts. Pour 1 cup of cold milk or Half and Half into the measuring cup and stir well.
  2. Measure the flour(s) into a large mixing bowl, add the yeast, stir well. Make an indentation in the middle of the dry mixture for the liquid; pour it in. Put an egg in your measure and beat with a fork; add to liquid in the flour.
  3. Using a large spoon, stir, turn and poke mixture until the liquid is incorporated and the dough begins to form. Turn the dough out onto a clean counter; dust with a little flour if too sticky to handle; repeat dusting as necessary. Knead dough for 4 minutes, form into a ball.
  4. Oil your bowl with cooking spray and place the dough in it. Cover the bowl with plastic wrap, then a hand towel and allow to rise for 50 minutes.
  5. After the rising time has elapsed, place a rack in the center slot of your oven and preheat to 350 degrees. Knead the dough for one minute. Spray a 12 cup muffin pan with oil and place half a pat of butter in each cup. Place the pan in the oven for a minute or two to melt the butter; remove.
  6. To form the rolls, let's make Cloverleafs. The idea is to roll pieces of dough between your palms to form 1" balls. Three of these balls should be arranged in each muffin cup; place them next to each other evenly, not stacked (see picture).
  7. Cover with the hand towel and allow to rise for at least 30 minutes or until doubled in size. Remove the towel and bake in the prepared oven until the tops are golden, about 20 minutes ... but watch closely after 15 minutes.
  8. Yum!
