In the restaurant, we offered a chocolate sundae which we served with a cookie.  It was a very simple cenfection inspired by a Chinese recipe I ran across years prior.  This is a great time of year for ice cream socials and homemade ice cream in general.  So I thought you might find these tasty guys a perfect fit with your plans!

They are easy to make, promise.  (Taken from the book Cook Live Learn).

Ingredients
  • 2¾ Cups All-Purpose Flour
  • 1 Cup Sugar
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 1 Cup Shortening
  • 1 Egg, Slightly Beaten
  • 1 Teaspoon Almond Extract
Instructions
  1. Place a rack in the center of your oven and preheat to 325 degrees.
  2. Mix flour, sugar, salt and soda together into bowl. Cut in shortening with a pastry knife (better yet, use your fingertips) until mixture resembles cornmeal. Add egg and almond extract and mix well.
  3. Shape dough into 1" balls and place 2" apart on ungreased baking sheet. Then, use a fork to press each cookie down to flatten slightly (mash to half height). Bake at 325 degrees for about 18 minutes until the cookies just begin to brown. Yield 25 - 30 cookies.
