Ingredients
  • 2¾ Cups All-Purpose Flour
  • 1 Cup Sugar
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 1 Cup Shortening
  • 1 Egg, Slightly Beaten
  • 1 Teaspoon Almond Extract
Instructions
  1. Place a rack in the center of your oven and preheat to 325 degrees.
  2. Mix flour, sugar, salt and soda together into bowl. Cut in shortening with a pastry knife (better yet, use your fingertips) until mixture resembles cornmeal. Add egg and almond extract and mix well.
  3. Shape dough into 1" balls and place 2" apart on ungreased baking sheet. Then, use a fork to press each cookie down to flatten slightly (mash to half height). Bake at 325 degrees for about 18 minutes until the cookies just begin to brown. Yield 25 - 30 cookies.
