Almond Cookies

- 2¾ Cups All-Purpose Flour
- 1 Cup Sugar
- ½ Teaspoon Baking Soda
- ½ Teaspoon Salt
- 1 Cup Shortening
- 1 Egg, Slightly Beaten
- 1 Teaspoon Almond Extract
- Place a rack in the center of your oven and preheat to 325 degrees.
- Mix flour, sugar, salt and soda together into bowl. Cut in shortening with a pastry knife (better yet, use your fingertips) until mixture resembles cornmeal. Add egg and almond extract and mix well.
- Shape dough into 1" balls and place 2" apart on ungreased baking sheet. Then, use a fork to press each cookie down to flatten slightly (mash to half height). Bake at 325 degrees for about 18 minutes until the cookies just begin to brown. Yield 25 - 30 cookies.
