Garlic Mashed Potatoes

One of my favorite side dishes, Mashed Potatoes are wonderful with a “down home” Pot Roast.  Spoon a little pot gravy on them and it is pure comfort!  Here we will add some roasted garlic to jazz them up a little.  There is more to a great bowl of Mashed Potatoes than you might think.  See if you can find something new in this simple recipe!

Ingredients
  • 3 Medium Russet Potatoes, Peeled, Cross-Cut into ¼" Thick Slices (Russets have the least carbs!)
  • 3 Tablespoons Butter or Margarine
  • ⅓ Cup Half and Half or Milk
  • 2 Roasted Cloves of Garlic
  • Salt and Pepper to Taste
Instructions
  1. Place the potato slices in a pot large enough to contain them. Add 1 teaspoon salt and 1 teaspoon oil (helps prevent boiling over). Fill the pot with water to cover the potatoes and then some. Bring to a boil over high heat.
  2. Once boiling, lower heat to medium or a little less. You want a slow boil. Do not cover. Cook until the potato slices literally fall apart when stuck with a fork. Drain in a colander and pour back into the pot.
  3. Add the butter, then use a whisk to crush the potatoes. Squeeze the garlic cloves out of their skins into the pot. Add most, but not all of the Half and Half and stir with your whisk to incorporate.
  4. Do you need more Half and Half? Probably. However, we are not making creamed potatoes so mix in the required milk carefully and a little at a time to retain some texture. Have you ever made a sand castle? Did you notice that sand retains it shape unless too much water is added, then it will become slush and fall apart? And, "too much water" might just be a very little more. Potatoes are like that. At some point, one more teaspoon of milk will be too much.
  5. Salt and freshly ground black pepper to taste.
  6. TO MAKE roasted garlic, tear off a small piece of aluminum foil, about 3" by 3". Slice off the rough end of each clove and lay the clove on the center of the foil. Pour enough olive oil over them to moisten the cloves completely. Fold the foil over them to completely seal the contents. Place packet in a 350 degree oven for 8 to 10 minutes.
