Oven Fried Potatoes

When enjoying a meal like Chicago Hot Dogs or homemade hamburgers, the notion of pairing them with French Fries is irresistible … at least to me.  To save the potatoes from an oil bath, they may be baked to good result and clean up is much easier.  The idea is to coat them with a little oil, add seasonings and bake to a golden brown.  Here I use a little mayo to help the spices stick to the potatoes during the marinade period.  In many recipes I’ve seen, the flavorings are a little over done, overpowering the potato flavor leading to an end product that is more potato casserole than French Fries.  Hopefully, you will find this version to provide a happy medium and a satisfying side dish!

Ingredients
  • 3 Medium Russet Potatoes, Peeled and Sliced into Sticks as for French Fries
  • 2 Tablespoons Mayonnaise (Use All Olive Oil if You Like)
  • 1 Tablespoon Olive Oil
  • 1 Slice of Yellow Onion Separated into Rings (1/4" Thick Slice)
  • 6 Twists of the Black Pepper Grinder
  • ¼ Teaspoon Garlic Powder
  • ½ Teaspoon Paprika
  • Salt to Taste
Instructions
  1. Make sure the potato sticks are dry even if you have to use a paper towel on them. Place them in a large bowl.
  2. Add all of the remaining ingredients to the bowl, except the salt and stir/toss well to coat as evenly as possible. Allow to marinate for about 20 minutes.
  3. While potatoes are marinating, preheat oven to 375 degrees.
  4. Select a 10 x 15 bake pan and coat liberally with cooking spray. Add the potatoes and arrange in a single layer. Place on center rack in your oven.
  5. Bake until browned to your liking. Use a spatula to turn them over and rearrange after 15 minutes.
  6. Remove to a plate lined with two paper towels and salt to taste. Serve immediately.

 

Tips:  Of course these can be done without peeling if you like the skin.  In that case, wash twice to insure all dirt is washed away and proceed as indicated.  If you are like me and hate difficult cleanups, line the bake pan with foil before loading it with marinated potatoes!
