Rwandan Plantains

Rwandans make both sweet and savory plantains. Both might be served at the same meal.

 Sweet Plantains

Use desired amount of yellow plantains, figuring ½ plantain per person. Cut plantain into half, then slice down the side and remove peel. Cut peeled plantains into fourths. You should have eight pieces.

 In very Hot Hot oil, about 1 to 1 ½” deep, place plantain pieces. Cook until it begins to turn black, then turn. Cook again until a black spot forms, then remove to paper towels. Serve as is or top with ice cream.

 Savory Plantains

Prepare very green plantains as described above. The flesh of the green plantain will be pink.  Cook in Hot Hot oil, frying until pink flesh turns white. Turn and repeat.

Remove to paper towels. Rwandans would now serve, but you might want to season with salt, pepper, whatever you like.   Serve hot.
