Zucchini Lemon

With some fantastic zucchini in hand and a lemon tree outside my door, I knew a marriage was inevitable!  There’s just two of us and I’m not planning any leftovers today.  This is really attractive, too.  Give it a try!

Ingredients
  • 1½ Tablespoon Olive Oil
  • 2 Cups Diagonally Sliced Small Zucchini
  • 1 Slice (1/4" Thick) of Sweet Onion, Cut into Quarters
  • 2 Tablespoons Chopped Red Bell Pepper
  • 2 Baby Carrots or 1" Peeled Carrot, Cut into Sticks
  • 3 Twists of the Black Pepper Mill
  • 2 Tablespoons Fresh Lemon Juice
  • 1 Tablespoon Butter
  • Salt to Taste
Instructions
  1. Measure the oil into a small saute pan. Add all but the last 3 ingredients to the pan. Turn heat to high and cook, stirring or tossing occasionally.
  2. Continue the saute until the centers of the zucchini begin to brown. Pour the lemon juice over all and stir or toss to combine and until about one-half of the juice has evaporated. Turn off heat, add butter and stir to melt. Taste and correct for salt to taste.
