One of the best things about meat loaf is making sandwiches from the leftovers!  Of course, you have to make one first.  A number of years ago I really got into meat loaves.  I experimented with all sorts of ingredients, such as shredded carrots and chopped spinach.  These days, I prefer a simple one when I am looking for a quick preparation and something delicious.

Instructions
  1. Place a rack in the center slot of your oven and preheat to 350 degrees.
  2. Line a loaf pan with aluminum foil and coat with cooking spray.
  3. Put all but the last ingredient into a large mixing bowl. Mash and knead to mix well throughout. Form the meat mixture into an oblong loaf shape and place in prepared pan. Spread 2 tablespoon of catsup over the top of the loaf evenly.
  4. Put in the center of the oven and bake for 1¼ hour or until done. It is ready when a thermometer inserted into the center of the loaf measures 170 degrees.
