One of the best things about meat loaf is making sandwiches from the leftovers! Of course, you have to make one first. A number of years ago I really got into meat loaves. I experimented with all sorts of ingredients, such as shredded carrots and chopped spinach. These days, I prefer a simple one when I am looking for a quick preparation and something delicious.

Ingredients
- 2 Pounds 90% Lean Ground Beef
- ¾ Cup Plain Bread Crumbs
- 2 Eggs
- ½ Cup Chopped Yellow Onion
- ½ Cup Chopped Red or Green Bell Pepper(or both)
- 1 Teaspoon Dried Parsley Flakes or 1 Tablespoon Fresh Minced Parsley
- ½ Teaspoon Garlic Powder
- ½ Cup Catsup
- ¼ Cup Prepared Yellow Mustard
- 6 Twists of the Black Pepper Mill
- ¼ Teaspoon Seasoning Salt
- ¼ Teaspoon Kosher or Sea Salt
- 1 Tablespoon Prepared Horseradish (Optional)
- 2 Tablespoons Catsup
Instructions
- Place a rack in the center slot of your oven and preheat to 350 degrees.
- Line a loaf pan with aluminum foil and coat with cooking spray.
- Put all but the last ingredient into a large mixing bowl. Mash and knead to mix well throughout. Form the meat mixture into an oblong loaf shape and place in prepared pan. Spread 2 tablespoon of catsup over the top of the loaf evenly.
- Put in the center of the oven and bake for 1¼ hour or until done. It is ready when a thermometer inserted into the center of the loaf measures 170 degrees.
