Green Goddess Salad Dressing
- 1 Cup Mayo (or make it Light by using ½ Cup Mayo and ½ Cup Plain Greek Yogurt)
- ⅓ Cup Compacted Chopped Fresh Parsley
- ⅓ Cup Compacted Chopped Green Onion -- Green Parts Only
- 1½ Inch Long Piece of a Medium-Size Cucumber (Cross Cut from the Whole Cucumber)
- 1 Peeled and Sliced Clove of Garlic
- 2½ Tablespoons Tarragon Vinegar
- 2 Twists of the Black Pepper Grinder
- Place all ingredients into the container of your blender.
- Blend on medium speed until the vegetables are pureed and the dressing is smooth.
- Refrigerate 30 minutes before serving. Makes about 1 and ½ cup dressing.
